Potato Corn Pudding Recipe
- 6 lg. potatoes
- 8 ears of corn (slice the kernels off)
- 1/2 pound bacon
- 1 lg. onion
- 1 quart. lowfat milk
- 1 tbsp. flour
- 1 sweet pepper (opt.), cut up fine
- Cut up bacon and onions then add in the pepper.
- Cook these in a skillet till onions are lightly browned.
- Place a layer of potatoes in a casserole dish and sprinkle with flour.
- Next, add in a layer of corn kernels, bacon bits and browned onion.
- Continue layering as needed.
- Now, pour the lowfat milk over the layers and bake at 350 degree oven till the top starts browning.
