Taco Beef Salad
- 3 c. cooked beef, julienned
- 1 tsp. salt
- 20 whole cherry tomatoes, halved
- 1/2 medium green pepper, cut in thin slices
- 1 medium avocado, cut in pieces
- 1 small onion, sliced and ringed
- 3/4 c. chili sauce
- 1 Tbsp. salad oil
- 1 tsp. chili powder
- 1/2 tsp. hot pepper sauce
- 1 clove garlic, crushed
- 1/2 medium head lettuce
- 1/2 c. corn chips, crushed
- 1/4 c. Cheddar cheese, grated
- Season beef strips with salt.
- Add cherry tomatoes, avocado, green pepper and onion.
- Mix
- chili sauce, oil, chili powder, hot pepper sauce and garlic.
- Add meat and vegetables and toss.
- Serve individual portions on bed of lettuce.
- Serve corn chips and grated cheese to sprinkle on top.
- Makes four to five servings.
