Beef Enchilada Stacks Recipe
- 1 pound grnd beef
- 1 sm. onion, minced
- 1/4 c. green pepper, minced
- 2 cloves garlic, chopped
- 1 (10 ounce.) can enchilada sauce
- 1 (2 1/4 ounce.) can sliced olives
- Salt & pepper
- 12 corn tortillas
- 1 pound Jack or possibly cheddar cheese
- Lowfat sour cream
- Minced green onion
- Ripe black olives
- Brown beef in large skillet over medium high heat.
- Add in onion, pepper and garlic; continue to cook till vegetables are tender.
- Stir in enchilada sauce, sliced olives and salt and pepper to taste.
- Lower heat and simmer, uncovered about 20 min.
