Chicken, Pork And Shrimp En Adobo
- 1 whole chicken breast, skinned, boned and cut in 2-inch cubes
- 1/2 lb. fillet of pork, cut in 2-inch cubes
- 5 Tbsp. cider vinegar
- 1 clove garlic, peeled, split and crushed
- 2 bay leaves
- 1 tsp. salt
- chicken broth
- 3 Tbsp. butter
- 1/2 lb. raw shrimp, peeled and deveined
- 2 or 3 Tbsp. Madeira wine
- salt and pepper to taste
- 3 c. hot, cooked rice
- Place chicken and pork cubes in a non-metal bowl.
- Add vinegar, garlic, bay leaves and salt.
- Let stand 10 minutes. Transfer to wok.
- Pour in enough chicken broth to cover meat. Cover and simmer until all liquid has evaporated.
- Add butter. When melted, add shrimp and wine.
- Stir-fry until shrimp are firm and pink.
- Season to taste with salt and pepper.
- Remove bay leaves.
- Serve over rice.
- Makes 6 servings.
