Island Fish

  1. Marinate fish in lime juice at least 1 hour before cooking.
  2. Preheat oven at 350*.
  3. Smear a baking dish with 1 teaspoons coconut oil.
  4. Sprinkle the lemongrass and ginger on both sides of fish and lay in dish.
  5. Pour the coconut milk on top.
  6. Bake for 30-40 minutes.
  7. Garnish with cilantro and serve.
