Spinach Madeline*
- 2 pkg. chopped spinach
- 4 Tbsp. butter
- 2 Tbsp. flour
- 2 Tbsp. onion, chopped
- 1/2 c. evaporated milk
- 1/2 c. vegetable liquid
- 1/2 tsp. black pepper
- 3/4 tsp. celery salt
- 3/4 tsp. garlic salt
- salt to taste
- 6 oz. jalapeno cheese, diced
- 1 tsp. Worcestershire sauce
- red pepper to taste
- Prepare spinach.
- Drain and save liquid.
- Melt butter over heat in saucepan.
- Add flour and blend.
- Slowly add liquid, stirring constantly.
- Cook until thick.
- Add seasonings and cheese.
- Mix until melted.
- Blend with cooked spinach.
- Place in casserole with buttered bread crumbs.
- Even better next day. Makes 6 servings.
