Beef, String Beans And Water Chestnuts

  1. Cut beef into 1/8-inch slices.
  2. In a glass dish, such as a 10-inch pie plate, mix hoisin, soy, sherry, cornstarch and optional chili paste.
  3. Add meat and stir.
  4. In non-stick skillet, heat oil on high until a drop of water dances on the surface.
  5. Stir-fry beans, mushrooms, scallions and water chestnuts until tender, about 3 minutes.
  6. Push vegetable mixture to top sides and stir-fry beef mixture until no longer pink inside, about 2 minutes.
  7. Mix vegetables, meat and sauce.
  8. Place in serving dish.
  9. Serve with steamed rice.
  10. Serves 4.
