Sausage Stuffed Zucchini Recipe
- 1 1/2 lbs. zucchini
- 1/2 c. water
- 1/2 pound pork sausage
- 1/4 c. onions, minced
- 1 slightly beaten egg
- 1/2 c. crushed saltines
- 1/2 c. Mozzarella cheese
- Salt
- Garlic salt
- Pepper
- Paprika
- Cut zucchini lengthwise.
- Scoop out pulp; set aside, leaving 1/4" shell.
- Chop pulp up for 1 c.. Add in to sausage mix.
- Cook sausage and onions; drain.
- Cook zucchini in water, shells turns upside down.
- Add in remaining ingredients except paprika to sausage and onions.
- Stuff zucchini with sausage mix.
- Bake at 350 degrees for 25 min.
- Sprinkle with paprika.
