Broiled Chicken with Spinach

  1. Brush chicken with 1 tsp.
  2. of the vinaigrette.
  3. Broil 4 min.
  4. on each side, or until cooked through.
  5. Cook rice according to package instructions.
  6. When done, place in center of serving plate.
  7. Toss spinach with remaining vinaigrette and place on top of rice on serving plate.
  8. Top with cooked chicken.
  9. Toss together broccoli, carrot, mushrooms, onions and ranch dressing.
  10. Cover and refrigerate briefly.
  11. Sprinkle salad with sunflower kernels just before serving.
  12. Enjoy yogurt for dessert.
  13. Serve meal with CRYSTAL LIGHT.
