Mark Twain'S Sweet Mince Cake

  1. Cream margarine and sugar.
  2. Add eggs, 1 at a time; beat well after each addition.
  3. Sift dry ingredients together; combine brandy and cream.
  4. Add dry ingredients and brandy-cream mixture alternately to margarine mixture, beginning and ending with dries. In a small bowl, combine mincemeat and 2 tablespoons flour until blended.
  5. Fold into batter.
  6. Spoon batter into greased and floured 9-inch tube pan.
  7. Bake at 325u0b0 for 1 hour and 20 minutes, until cake is golden brown.
  8. Cool in pan 10 minutes.
  9. Turn cake out onto dish.
