Mark Twain'S Sweet Mince Cake
- 1 c. margarine
- 1 c. sugar
- 4 eggs
- 2 c. sifted flour
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 c. brandy
- 1/4 c. heavy cream
- 1 1/2 c. mincemeat (from jar)
- 2 Tbsp. flour
- Cream margarine and sugar.
- Add eggs, 1 at a time; beat well after each addition.
- Sift dry ingredients together; combine brandy and cream.
- Add dry ingredients and brandy-cream mixture alternately to margarine mixture, beginning and ending with dries. In a small bowl, combine mincemeat and 2 tablespoons flour until blended.
- Fold into batter.
- Spoon batter into greased and floured 9-inch tube pan.
- Bake at 325u0b0 for 1 hour and 20 minutes, until cake is golden brown.
- Cool in pan 10 minutes.
- Turn cake out onto dish.
