Zesty Pasta Salad
- 1 pkg. tri-color rotini pasta
- 1 jar pepper relish (should be red)
- 1/2 can tomato paste diluted with water
- Italian marinated mushrooms (if possible)
- 1 jar sliced green olives
- 1 can chopped black olives
- 1 jar diced pimentos
- Grated Parmesan cheese
- Boil rotini pasta 15 to 20 minutes.
- While pasta is boiling, dilute about half the can of tomato paste with water to make the consistency of a sauce.
- In a bowl, combine tomato paste mixture and entire jar of pepper relish (stir together).
- When pasta is finished boiling, combine it to the sauce mixture.
- Next add olives, mushrooms (chop first), and pimentos.
- Stir well.
- Sprinkle parmesan lightly if desired and add black pepper for extra spiciness.
