Peach Melba Parfait Recipe

• 1 (10 ounce.) pkg. frzn raspberries, thawed
• 1 tbsp. brandy (optional)
• 1 pt. vanilla ice cream
• 1 (16 ounce.) can sliced peaches
• 4 coconut macaroons, crumbled
• Non-dairy whipped topping

1. Puree raspberries and brandy till smooth.
2. Strain and throw away seeds.
3. Layer ice cream, peaches, cookies, and raspberry sauce in 6 parfait glasses or possibly dessert dishes.
4. Top each parfait with whipped topping.
5. Serves 6.
