Peach Melba Parfait Recipe
- 1 (10 ounce.) pkg. frzn raspberries, thawed
- 1 tbsp. brandy (optional)
- 1 pt. vanilla ice cream
- 1 (16 ounce.) can sliced peaches
- 4 coconut macaroons, crumbled
- Non-dairy whipped topping
- Puree raspberries and brandy till smooth.
- Strain and throw away seeds.
- Layer ice cream, peaches, cookies, and raspberry sauce in 6 parfait glasses or possibly dessert dishes.
- Top each parfait with whipped topping.
- Serves 6.
