Brazil Nut Fruit Cake Recipe

  1. Sift together flour, sugar, baking pwdr and salt into a large bowl.
  2. Add in the nuts, dates and cherries.
  3. Mix well.
  4. Beat the Large eggs with the vanilla and blend into the flour mix.
  5. Pour into a 3x7 pan lined with greased parchment paper (wax paper can be substituted for the parchment paper).
  6. Bake in a preheated 350 degree oven for 45-60 min.
  7. Let cold briefly in pan, then turn out of pan and finish cooling on a rack.
