Brazil Nut Fruit Cake Recipe
- 3/4 c. flour
- 3/4 c. sugar
- 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 3 c. whole Brazil nuts
- 2 Packages whole pitted dates
- 1 c. maraschino cherries, liquid removed and minced
- 3 Large eggs
- 1 teaspoon vanilla
- Vegetable shortening or possibly butter for loaf pan
- Sift together flour, sugar, baking pwdr and salt into a large bowl.
- Add in the nuts, dates and cherries.
- Mix well.
- Beat the Large eggs with the vanilla and blend into the flour mix.
- Pour into a 3x7 pan lined with greased parchment paper (wax paper can be substituted for the parchment paper).
- Bake in a preheated 350 degree oven for 45-60 min.
- Let cold briefly in pan, then turn out of pan and finish cooling on a rack.
