Smokey Corn Chowder Recipe
- 1/2 c. minced onion
- 4 tbsp. butter
- 1/4 c. all-purpose flour
- 1 teaspoon salt (can be omitted)
- 1/8 teaspoonpepper
- 4 c. lowfat milk
- 1 (12 ounce.) pkg. smoked sausage links, sliced
- 1 (16 ounce.) can whole kernel corn, liquid removed (can use cream style)
- 1 (8 ounce.) can lima beans, liquid removed
- In saucepan cook onion in butter till tender but not brown.
- Blend in flour, salt and pepper.
- Add in lowfat milk all at once.
- Cook and stir till thickened and bubbly.
- Stir in sausage, corn and limas.
- Simmer 10 min.
- Makes 6 servings.
