Better-Than-Ever Beef Enchiladas

  1. Heat oven to 400F.
  2. Cook meat and peppers in large nonstick skillet on medium heat until meat is no longer pink, stirring frequently.
  3. Add 1 cup salsa; simmer 3 to 4 min.
  4. or until peppers are tender.
  5. Remove from heat; stir in 1/2 cup cheese.
  6. Spread 1/4 cup salsa onto bottom of 13x9-inch baking dish.
  7. Brush dressing lightly on both sides of tortillas.
  8. Stack 4 tortillas on large sheet of waxed paper; wrap tortillas in waxed paper.
  9. Microwave on HIGH 20 to 30 sec.
  10. or just until warmed.
  11. Immediately spoon 1/3 cup meat mixture down center of each warm tortilla; roll up.
  12. Place, seam-side down, in dish.
  13. Repeat with remaining 4 tortillas and meat mixture.
  14. Spoon remaining salsa evenly over filled tortillas; cover with foil.
  15. Bake 20 min.
  16. or until heated through.
  17. Uncover; top with remaining cheese.
  18. Bake 2 to 3 min.
  19. or until cheese is melted.
  20. Sprinkle with cilantro.
