Lentils & Red Peppers

  1. Place lentils in saucepan.
  2. Add enough water to cover lentils by 2 inches.
  3. Bring to boil on medium-high heat.
  4. Simmer on medium-low heat 30 min.
  5. or until lentils are tender; drain.
  6. Transfer lentils to medium bowl.
  7. Add peppers, onions and mint; mix lightly.
  8. Refrigerate several hours or until chilled.
  9. Mix dressing and garlic until blended.
  10. Add to lentil mixture along with the cheese; mix lightly.
