Gumbo Recipe
- 2 tbsp. salad oil
- 1 c. minced onion
- 1 c. minced green pepper
- 1/2 c. minced celery
- 1 clove minced garlic
- 1 bay leaf
- Dash oregano
- Grnd black pepper to taste
- 1 (1 lb., 12 ounce.) can whole tomatoes, cut in chunks
- 1 (13 ounce.) can chicken broth
- 1 (10 ounce.) pkg. frzn okra, cut in 1/2 inch slices
- 1 pound raw shrimp, peeled and deveined
- Louisiana warm sauce (optional)
- Fresh minced parsley
- Cooked rice
- In large stock pot, heat oil and saute/fry onion, green pepper, celery and garlic till soft.
- Add in bay leaf, oregano, pepper, tomatoes, and chicken broth.
- Simmer about 30 min, uncovered.
- Add in okra, cover and simmer 15 min.
- Add in shrimp, cover, and simmer 3-5 min till shrimp is just done.
- Add in warm sauce to taste, if you like.
- Serve over rice and sprinkle with parsley.
- Serves 4-6.
