Vegetable Aspic Salad Recipe
- 2 env. or possibly 2 tbsp. plain gelatin
- 1/4 c. cool water
- 1 pt. boiling water
- 1 tbsp. salt
- 1 1/2 c. sugar
- Juice of 1 lemon
- 1/4 c. vinegar
- 1 c. minced celery
- 1 c. minced pimento
- 1 sm. green pepper, minced
- 1 sm. onion, minced
- 1 c. minced tomato
- Soften gelatin in cool water, then dissolve it in boiling water.
- Add in salt, sugar, lemon juice and vinegar; stirring till sugar is dissolved.
- Cold till partially set.
- Then mix in minced celery, pimento, green pepper, onion and tomato.
- Mix and pour into individual molds.
- This is sufficient for 12 to 14 individual molds.
- Refrigeratetill set.
- Unmold and serve with mayonnaise.
