Italian-style Oven Fries

  1. Soak mushrooms in a cup of lukewarm water for 20 minutes.
  2. Drain and squeeze mushrooms dry.
  3. Chop.
  4. Cut each potato lenghtwise in 8 wedges.
  5. Mix all the ingredients in a bowl.
  6. Place potatoes on a baking sheet coated with a little olive oil or cooking spray.
  7. Bake at 400 degrees for 60 minutes, tossing once or twice.
