Not Exactly Italian Sausages with Peppers
- 2 tablespoons olive oil
- 1 1/2 pounds Italian-style turkey sausages, cut on an angle into 2- to 3-inch lengths
- 2 medium red onions, cut into 3/4-inch dice
- 2 large red bell peppers, cored, seeded, and cut into 3/4-inch dice
- 6 garlic cloves, thinly sliced
- 7 ripe plum tomatoes, cut into 3/4-inch dice
- 1/4 cup coarsely chopped fresh basil
- 1 teaspoon dried oregano
- Kosher salt and freshly ground black pepper to taste

- Heat the oil in a large skillet over medium-high heat.
- Add the sausages and cook, stirring occasionally, until they are lightly browned, about 3 minutes.

- Add the onions, bell peppers, and garlic.
- Cook, stirring often, until the vegetables soften, about 6 minutes.
- Add the tomatoes, basil, and oregano.
- Cook, stirring often, until the tomatoes and sausage are heated through, about 5 minutes more.
- Season with salt and pepper.
- Serve hot.
