Snow Peas with Mint and Pine Nuts

  1. Place a large nonstick skillet over medium-high heat.
  2. Add the olive oil, peas, pine nuts, and garlic.
  3. Cook them, stirring occasionally, until the snow peas are crisp-tender, 2 to 3 minutes (do not overcook them or they will get mushy).
  4. Remove the pan from the heat.
  5. Stir in the sesame oil and mint.
  6. Season with salt.
  7. Serve immediately.
