Tomato-Barley Salad
- 12 cup barley
- 2 ears corn, roasted, kernels removed
- 1 cucumber, cut into medium chunks
- 12 zucchini, cut in medium chunks
- 1 small red onion, chopped
- 1 lemon, zested and juiced
- 1 teaspoon . salt
- 12 teaspoon ground black pepper
- 6 large tomatoes
- In saucepan, bring barley and 2 cups water to boil.
- Cover and simmer until tender, about 45 minutes.
- Drain and rinse.
- Add remaining ingredients to barley; toss to combine.
- Core tomatoes and cut crosswise, not cutting through the tomato.
- Fan out wedges, forming a bowl.
- Fill tomatoes with barley mixture.
