Tomato-Barley Salad

  1. In saucepan, bring barley and 2 cups water to boil.
  2. Cover and simmer until tender, about 45 minutes.
  3. Drain and rinse.
  4. Add remaining ingredients to barley; toss to combine.
  5. Core tomatoes and cut crosswise, not cutting through the tomato.
  6. Fan out wedges, forming a bowl.
  7. Fill tomatoes with barley mixture.
