Slow Cook Vegetable Cocktail Beef Stew
- 2 12 lbs stewing beef
- 6 medium carrots
- 3 stalks celery
- 6 shallots or 2 big onions
- 1 green pepper
- 1 (950 ml) bottle vegetable cocktail (V8)
- 2 12 tablespoons tapioca
- 2 large potatoes, chopped into small cubes
- Cut beef into bit size chunks.
- Chop celery and carrots into 1/2 inch pieces.
- Slice big onions into quarters and quarter again.
- Chop green pepper.
- Pour vegetable cocktail into slow cooker pot, adding vegetables prepared as above.
- Stir.
- Add tapioca and stir again.
- (Important- do not add potatoes for more than one hour, place in cooker after 4 hours.
- ).
- Set slow cooker on medium heat (or auto) and cook for five hours.
