Wild Rice And Chicken (Or Turkey) Salad
- 1 (6 oz.) pkg. long grain and wild rice mix
- 2 c. diced/cooked chicken (canned chicken or turkey can be substituted)
- 1/2 c. chopped green pepper (optional)
- 2 Tbsp. chopped pimento (optional)
- 1/2 c. mayonnaise (can use Light or Fat-Free)
- 2 Tbsp. Russian dressing (can use Light)
- 1 Tbsp. lemon juice (ReaLemon is fine)
- Prepare rice according to package and let cool.
- (You can place it in the freezer for one hour.)
- Add meat, green pepper and pimiento to rice and toss gently.
- Combine mayonnaise, Russian dressing and lemon juice.
- Stir wet ingredients into the dry ingredients.
- Dash of pepper and salt to taste (optional).
- Chill for one hour (overnight is better, allows all the flavors to come out, but may make the mixture too wet.)
- Yield: 6 (1/2 cup) servings.
