Roasted Potato Salad with Radicchio and Fennel

  1. Season potatoes with salt and black pepper in large bowl.
  2. Add oil; toss to coat.
  3. Bake in 350 degrees F-convection oven 10 to 15 min.
  4. or until potatoes are tender and lightly browned.
  5. Cool.
  6. Combine remaining ingredients in separate large bowl.
  7. Add potatoes; mix lightly.
