Roasted Potato Salad with Radicchio and Fennel
- 1 gal. red bliss potatoes, quartered Safeway 2 pkg For $5.00 thru 02/09
- to taste salt and black pepper
- 3/4 cup olive oil
- 3 qt. radicchio, chiffonade
- 1-1/2 qt. fennel, very thinly sliced
- 4-1/2 cups crumbled feta cheese
- 3 cups yellow bell peppers, medium dice
- 1-1/2 cups fresh Italian parsley, chopped
- 1-1/2 cups fresh basil, chiffonade
- 1-1/2 tsp. crushed red pepper
- 3 cups KRAFT Greek Vinaigrette
- Season potatoes with salt and black pepper in large bowl.
- Add oil; toss to coat.
- Bake in 350 degrees F-convection oven 10 to 15 min.
- or until potatoes are tender and lightly browned.
- Cool.
- Combine remaining ingredients in separate large bowl.
- Add potatoes; mix lightly.
