Mazetti
- 2 lb. ground beef
- 2 1/2 c. chopped celery
- 2 c. chopped onions
- 2 cloves garlic, chopped
- 1 Tbsp. water
- 1 (8 oz.) pkg. medium-fine noodles
- 2 cans tomato soup
- 1 (6 oz.) can mushrooms
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 lb. grated sharp Cheddar cheese (2 c.)
- 2 Tbsp. vegetable oil
- 1 onion, sliced
- 2 thin carrots, sliced
- 1 tsp. ginger
- 1 sweet red pepper, cut into thin slivers
- 1 c. green beans, cut into 2-inch lengths, or snow peas
- 3 c. chicken broth
- 1 1/2 c. water
- 1 Tbsp. soy sauce
- 1 can corn (plain; not creamed)
- 1 (4 oz.) can ham
- 1 (8 oz.) can mushrooms
- 3 oz. or more Chinese noodles
- Use a wok or large saucepan to heat the oil.
- Stir-fry the onion and carrot for 3 minutes.
- Add garlic, ginger and red pepper.
- Stir-fry for 1/2 minute.
- Add green beans, broth, water and soy sauce.
- Cover.
- Bring to a boil and cook for 2 minutes more.
- Lower heat to simmer.
- Add corn, ham and mushrooms.
- Return to a boil, stirring.
- Cover.
- Turn off heat and let sit for 5 minutes.
- Top with Chinese noodles and serve.
