Brad's layered taco bake
- 1 tbsp corn oil
- 1 large jalapeno, seeded and chopped
- 1 small onion, chopped
- 2 lb lean hamburger
- 2 packages taco seasoning
- 12 corn tortillas
- 4 cup shredded cheddar cheese
- 1 can refried beans
- 1 cup salsa verde
- 1 half bunch cilantro, chopped
- 1 sour cream
- 1 half bunch cilantro, chopped
- 1 lime wedges
- 1 salsa or hot sauce
- Heat oil in a large frying pan.
- Add onion and jalapeno.
- Fry for 2-3 minutes.
- Add hamburger and brown until done.
- Stirring frequently.
- Drain.
- Add taco seasoning and 1 cup of water.
- Simmer until water reduces.
- While beef is steaming, place tortillas in batches over beef to steam.
- Flip frequently.
- In a 9x13 baking dish get ready to layer casserole
- First lay 6 steamed tortillas on bottom of casserole.
- Spread 1/2 cup of salsa verde on tortillas.
- Add half of the meat mix.
- Add the can of beans and spread evenly.
- Add two cups of cheese and half bunch of cilantro all spread out.
- Next lay the other 6 torlillas over.
- Spread rest of salsa verde.
- Add rest of meat mix then rest of cheese.
- Bake at 350 20-25 minutes
- Serve with sour cream, fresh cilantro, lime wedges, and salsa or hot sauce
