Hummingbird Cake
- 3 cup flour
- 1 1/2 cup white sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp ground cinnamon
- 3 eggs
- 2 tsp vanilla extract
- 1 1/2 cup oil, Canola
- 1 can 8oz. crushed pineapple, undrained
- 2 cup bananas, mashed about 3 large
- 1 1/2 cup pecans, chopped
- 1 packages 8oz. cream cheese, softened
- 1 stick butter
- 2 cup confectionery sugar
- 1 tsp vanilla
- Preheat oven to 350.
- Whisk together all dry ingredients.
- Add the next 6 ingredients with a spoon until all are wet.
- Spray 9x13 inch pan.
- Add batter and bake for 30 to 35 minutes until cake is done in center.
- Frost with cream cheese frosting.
- Whip together cream cheese, butter, sugar, and vanilla until smooth.
