Corn, Avocado and Tomato Salad
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1/4 cup cilantro, chopped
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 2 1/2 cup fresh cooked corn kernels (about 5 ears)
- 1 1/2 cup diced avocado
- 1 pints quartered cherry tomatoes
- 1/2 cup red onion, finely diced
- In a large bowl, whisk the olive oil, lime juice, cilantro, salt, and pepper together
- Add the corn, avocado, tomatoes, and onion and toss to mix
- Serve at room temperature with blue tortilla chips
