Apple-Kissed Chicken
- 1/2 c. apple juice
- 3 Tbsp. apple butter
- 1 tsp. lemon rind, grated
- 1 Tbsp. Lemon juice
- 6 chicken breast halves, skinned
- 1/2 tsp. poultry seasoning
- 1 small onion, sliced
- Cooking apple- 12 wedges
- 1 Tbsp. plus 1 tsp. corn starch
- 1 Tbsp. plus 1 tsp. water
- 2 Tbsp. walnuts, chopped, toasted
- Combine first 4 ingredients in a small bowl.
- Sprinkle chicken with poultry seasoning. Coat a large skillet with cooking spray.
- Place over medium heat.
- Add chicken and cook 5 min. on each side or until browned. Remove chicken; drain on paper towels. Return chicken to skillet.
- Pour apple juice mixture over chicken, top with onion slices.
- Cover, reduce heat and simmer 10 minutes.
- Add apples wedges, cover simmer another 10 min., or until chicken is tender.
- Transfer chicken mixture to serving platter, using a slotted spoon.
- Dissolve cornstarch in water, add to apple juice mixture in skillet, stirring constantly.
- Cook until thickened.
- Spoon sauce over chicken.
- Sprinkle with walnuts.
- Yield: 6 servings.
