Chicken & Scampi Recipe
- 3 1/2 - 4 pound fryer (cut up)
- 1 tbsp. salt
- 1/2 teaspoon pepper
- 1/4 c. butter (or possibly butter)
- 3 sm. onions, minced
- 1 clove chopped garlic
- 3 tbsp. parsley
- 1/2 c. port wine (or possibly water)
- 1 (8 ounce.) can tomato sauce
- 1 teaspoon basil
- 1 pound shelled, deveined shrimp
- Snipped parsley
- 45 min before serving:
- Rub chicken with salt and pepper.
- Heat butter and fry chicken till golden.
- Add in onion, garlic, minced parsley, wine, tomato sauce and basil.
- Simmer, covered about 30 to 35 min.
- Push chicken to one side of skillet.
- Turn up heat so tomato sauce mix boils; add in shrimp and cook.
- Pile chicken pcs in serving dish.
- Top with shrimp.
- If necessary skim fat from sauce; pour sauce over chicken and shrimp.
- Sprinkle with parsley or possibly garnish.
- Serves 6.
