Black Cherry Jello Salad Recipe
- 1 pkt Black cherry jello (3 ounce)
- 2 Tbsp. Sugar
- 1 dsh Salt
- 1 c. Boiling water
- 1 can Pitted dark sweet cherries (1 lb)
- 1 Tbsp. Lemon juice
- 1/2 c. Whipped cream
- 1 c. Miniature marshmallows
- Dissolve jello, sugar and salt in boiling water.
- Drain cherries, measuring syrup; add in water to make 3/4 c.. Add in syrup and and lemon juice to jello.
- Refrigeratetill very thick.
- Fold half the cherries into 1 c. jello.
- Pour into large mold.
- Refrigeratetill set but not hard.
- Meanwhile, whip remaining jello till fluffy.
- Mix in whipped cream, remaining cherries and marshmallows.
- Spoon into mold.
- Refrigeratetill hard.
- Serve with Marshmallow-Mayonnaise topping: Blend 1/3 c. marshmallow cream into 2/3 c. mayonnaise, stirring till smooth.
