Poppy Seed-Banana Bread
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. each ground cinnamon and salt
- 1/2 cup butter, softened
- 2/3 cup dark brown sugar
- 1/4 cup granulated sugar
- 1-1/3 cups mashed fully ripe bananas (about 4 small)
- 1/4 cup Renee's Poppy Seed Dressing
- 1 Tbsp. vanilla
- 2 eggs
- 1/2 cup each sultana raisins and chopped walnuts
- Heat oven to 400F.
- Combine flour, baking soda, cinnamon and salt.
- Beat butter and sugars in large bowl with mixer until light and fluffy.
- Add bananas, dressing and vanilla; mix well.
- Blend in eggs.
- Gradually beat in flour mixture just until blended.
- Stir in raisins and nuts.
- Pour into greased and floured 9x5-inch loaf pan.
- Bake 1 hour 5 min to 1 hour 15 min.
- or until toothpick inserted in centre comes out clean.
- Cool 10 min.
- Remove from pan to wire rack; cool completely.
