Turkey Cutlets with Two Sauces
- 8 ounces dried whole-grain spaghetti
- Olive oil spray
- 3/4 cup fat-free, low-sodium chicken broth
- 1 pound turkey cutlets or strips, all visible fat discarded
- 1/4 cup panko (Japanese bread crumbs)
- 1/2 cup fat-free meatless spaghetti sauce (lowest sodium available)
- 1/2 cup light Alfredo sauce
- Prepare the pasta using the package directions, omitting the salt and oil.
- Meanwhile, preheat the oven to 375F.
- Lightly spray a 1 1/2-quart shallow baking dish or 13 x 9 x 2-inch baking dish with olive oil spray.
- Spread the pasta in the dish.
- Pour the broth over the pasta.
- Place the turkey in one layer over the pasta.
- Sprinkle with the panko.
- Lightly spray with olive oil spray.
- Bake, covered, for 35 minutes.
- Pour the spaghetti sauce over the casserole.
- Pour the Alfredo sauce over the spaghetti sauce.
- Bake, uncovered, for 8 to 10 minutes, or until the sauce is warmed through and the turkey is no longer pink in the center.
