Sal'S Pasta Ala Vodka
- 1 medium onion, sliced thin
- 3 cloves garlic, minced
- 1/4 c. virgin olive oil
- 1/8 lb. Prosciutto, chopped up
- 1/2 stick butter
- 1/4 c. chopped, roasted red pepper
- 1/4 c. chopped, sun-dried tomatoes
- 1/2 to 1 tsp. hot pepper flakes
- 1 pt. heavy cream
- 1/3 c. grated Locatelli cheese
- 1/3 c. vodka
- 1 jar marinated artichoke hearts, quartered
- prepared tomato sauce
- 1 Tbsp. basil
- 1 lb. bow tie pasta
- Saute onion and garlic in olive oil.
- (Add while oil is still cool.)
- Add Prosciutto; saute about 10 minutes, until onion is translucent.
- Add butter, chopped pepper, sun-dried tomatoes, hot pepper flakes and basil; simmer 10 minutes.
- Add heavy cream, grated cheese, vodka, artichoke hearts and just enough prepared sauce until sauce is pink color.
- Serve over bow tie pasta.
