Miso Soup with Leek and Tempura Crumbs

  1. Make the dashi stock with bonito flakes.
  2. Slice the leek diagonally.
  3. Bring the dashi stock to the boil and add the leek and tempura crumbs.
  4. Let it simmer for 1 minute, then add the miso.
  5. Transfer to serving bowls and season with shichimi spice if you like.
  6. Miso Soup with New Onions and Potatoes.
  7. Miso Soup with Spinach and Poached Egg.
