Miso Soup with Leek and Tempura Crumbs
- 1 Japanese leek
- 1 tbsp plus Tempura batter crumbs
- 600 ml Dashi stock
- 2 tbsp Miso
- 1 Shichimi seasoning
- Make the dashi stock with bonito flakes.
- Slice the leek diagonally.
- Bring the dashi stock to the boil and add the leek and tempura crumbs.
- Let it simmer for 1 minute, then add the miso.
- Transfer to serving bowls and season with shichimi spice if you like.
