Zucchini Casserole
- 3 1/2 c. shredded zucchini
- 1 tsp. salt
- 3 eggs, beaten
- 1/3 c. flour
- 1 tsp. herb seasoning
- 3 c. Mozzarella cheese
- 3 Tbsp. butter
- 8 oz. mushrooms
- 14 oz. pizza sauce
- 1/2 c. ripe olives
- 1 c. chopped peppers
- Mix zucchini and salt in a bowl; let stand 15 minutes.
- Drain, squeezing liquid out.
- Return zucchini to bowl.
- Add eggs, flour, herb seasoning and 1/2 cup cheese.
- Mix.
- Spread mixture into a greased 9 x 13-inch casserole.
- Bake at 350u0b0 for about 15 minutes or until the center sets.
- Meanwhile brown mushrooms in butter. After initial baking, spoon 1/2 of pizza sauce over the zucchini mixture.
- Cover with mushrooms and 1/2 of olives.
- Sprinkle with peppers and 1/2 of remaining cheese.
- Top with remaining ingredients.
- Bake at 350u0b0 for 20 minutes.
