Three Cheese Tortellini with Summer Squash & Fresh Basil
- 1 (9-ounce) package refrigerated fresh cheese tortellini*
- 2 Land O Lakes Garlic & Herb Saute Express squares
- 2 medium (2 cups) zucchini, cut into 1/4-inch slices
- 1 medium (2 cups) yellow summer squash, cut into 1/4-inch slices
- 1/4 cup Parmesan cheese
- 1 tablespoon chopped fresh basil leaves
- Cook tortellini according to package directions.
- Drain; keep warm.
- Melt Saute Express squares in 12-inch nonstick skillet just until bubbles begin to form.
- Add zucchini and squash.
- Cook, stirring occasionally, 5-6 minutes or until crisply tender.
- Add cooked tortellini.
- Toss together until combined.
- Place into serving dish.
- Sprinkle with Parmesan cheese and basil.
