Pumpkin Cake
- 1 box yellow cake mix
- 4 eggs
- 1/2 c. melted butter
- 2/3 c. milk
- 3/4 c. sugar
- 2 tsp. cinnamon
- 1 large can pumpkin pie filling
- 1/4 c. sugar
- 2 Tbsp. melted butter
- 1/2 c. chopped nuts
- Set aside 1 cup of dry cake mix.
- Beat 1 egg.
- Add 1/2 cup melted butter.
- Mix into rest of dry cake mix.
- Press into bottom of greased and floured 9 x 13-inch pan.
- In another bowl, beat 3 eggs.
- Add milk, 3/4 cup sugar, 1 teaspoon cinnamon and pumpkin pie filling.
- Mix together and pour over cake.
- Mix 1/4 cup sugar, 1 teaspoon cinnamon, 2 tablespoons melted butter and nuts with 1 cup of dry cake mix.
- Sprinkle over filling.
- Bake 10 minutes at 400u0b0. Reduce heat to 350u0b0 and bake 35 minutes.
- Insert knife to test doneness.
