AMIEs Marinated Olives
- 250 grams large green olives with seeds, drained
- 250 grams black olives with seeds, drained
- 3/4 cup extra virgin olive oil
- 1 tbsp finely chopped rosemary
- 1 tbsp finely chopped oregano
- 1 tsp finely grated lemon zest
- 2 clove garlic, finely sliced
- 1/2 tsp chilli flakes
- Combine, mix and toss all the ingredients in a medium bowl.
- Cover and set aside to marinate for 5 hours.
- Marinated olives can be stored in refrigerator for up to 1 week.
- But we should bring the olives back to room temperature before serving because oil will solidify in the fridge.
