Herb Crusted Flank Steak
- 1 flank steak
- 1 tbsp rosemary; minced
- 1 tsp thyme; minced
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp ground coriander seed
- 1/3 cup breadcrumbs
- 2 tbsp butter; melted
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 kosher salt and peppercorn melange
- 1 vegetable oil; as needed
- Heat oil in an oven safe saute pan.
- Preheat oven to 400.
- Cover steak with just enough oil to cover.
- Season flank steak with fresh herbs, onion & garlic powder, ground coriander seed, salt, and pepper.
- Place breadcrumbs, melted butter, and remaining dried spices in a small bowl.
- Mix.
- Sear each side on medium heat until you get a nice caramelization.
- Spread breadcrumbs on top.
- Bake in the oven until desired doneness is reached.
- Anywhere from 5-20 minutes, depending on desired doneness.
- Briefly place under the broiler to crisp the breadcrumbs if necessary.
- Let rest five minutes before slicing very thinly against the grain.
