Braised Beef with Cauliflower Mash
- 2kg trimmed rolled beef brisket
- 1/4 cup seasoned flour
- 2 tablespoons olive oil
- 2 onions, thickly sliced King Sooper's 1 lb For $0.99 thru 02/09
- 2/3 cup tomato sauce
- 1/2 cup water
- 1/2 cup golden syrup
- 1/2 cup HEINZ Distilled White Vinegar
- 1 1/2 tablespoons VEGEMITE
- 1.25kg potatoes, peeled and roughly chopped
- 1/2 cauliflower, cut into florets Safeway 1 lb For $1.99 thru 02/09
- 100g PHILADELPHIA Light Spreadable Cream Cheese
- 1 tablespoon cornflour, combined with 1/4 cup cold water
- steamed Brussels sprouts, to serve
- Dust beef with seasoned flour.
- Heat oil in a large heavy-based pan and brown meat on all sides, for 8-10 minutes, then place into a slow cooker.
- Cook onions in same pan over medium heat for 5-6 minutes, until golden, then transfer to slow cooker along with tomato sauce, water, golden syrup, vinegar and Vegemite.
- Cover and cook on HIGH for 4 hours or LOW for 8 hours.
- Boil potatoes and cauliflower until tender.
- Drain and mash with Philly and season to taste.
- Keep warm.
- Lift cooked beef from slow cooker, cover and rest in a warm place for 20 minutes.
- Add cornflour mixture to sauce and continue cooking on HIGH for 20 minutes to thicken sauce.
- Carve the beef and serve with cauliflower mash, Brussels spouts and drizzled with sauce.
