Cajun Jambalaya

  1. In a large cast iron skillet, heat vegetable oil.
  2. Add ham, onion, pepper, celery and garlic and cook until vegetables are tender.
  3. Add chicken and cajun seasonings and turn heat to high.
  4. Brown well.
  5. Add chicken stock and rice, and simmer for 45 minutes.
  6. Add shrimp and simmer until shrimp turns pink and firm to the touch.
  7. Serve hot.
