Kentucky Whiskey Cake

  1. Soak cherries and raisins or dates in whiskey overnight.
  2. Cream sugar and butter until fluffy; add egg yolks and beat well.
  3. Add soaked fruit and remaining liquid, reserving a small amount of flour for nuts (add remaining to mixture).
  4. Add nutmeg and baking powder.
  5. Fold in beaten egg whites.
  6. Add lightly floured pecans last.
  7. Bake in a large greased tube pan lined with greased paper. Bake 3 to 4 hours (watch baking time) in slow oven (250u0b0 to 275u0b0).
