Kentucky Whiskey Cake
- 5 c. flour, sifted before measuring
- 1 lb. white sugar (2 1/3 c.)
- 1 c. brown sugar
- 3/4 lb. butter
- 6 eggs, beaten separately
- 1 pt. Kentucky bourbon
- 1 lb. candied cherries, cut in pieces or halves
- 2 tsp. nutmeg
- 1 lb. shelled pecans
- 1/2 lb. white raisins, cut in half or 1/2 lb. chopped dates
- 1 tsp. baking powder
- Soak cherries and raisins or dates in whiskey overnight.
- Cream sugar and butter until fluffy; add egg yolks and beat well.
- Add soaked fruit and remaining liquid, reserving a small amount of flour for nuts (add remaining to mixture).
- Add nutmeg and baking powder.
- Fold in beaten egg whites.
- Add lightly floured pecans last.
- Bake in a large greased tube pan lined with greased paper. Bake 3 to 4 hours (watch baking time) in slow oven (250u0b0 to 275u0b0).
