Mother Marys Meatloaf
- 3 pounds 80/20 Ground Beef (I Use Ground Chuck)
- 3 whole Eggs
- 1 envelope (1 Oz. Envelope) Lipton Onion Soup Mix
- 1 teaspoon Garlic Powder, Or To Taste
- 1 teaspoon Ground Black Pepper, Or To Taste
- 2 Tablespoons Dried Parsley Flakes
- 1/2 cups Oatmeal (not Quick Cooking)
- 1 cup Flavored Bread Crumbs (I Use Sage & Onion Stuffing Mix And Crush The Cubes)
- 4 slices Bacon
- Preheat oven to 350 degrees F.
- Combine all of the ingredients except bacon in a large mixing bowl until well incorporated.
- Shape into a loaf and place it in a greased 9x13 pan.
- Top meatloaf with bacon strips.
- Bake at 350 degrees F for 1 to 1-1/2 hours (depending on your oven) or until juices run clear.
- Remove from oven.
- Allow to stand for about 10 minutes before slicing.
