Texas State Fair Chili
- 3 lb. ground meat
- 3/4 c. flour
- 2 Tbsp. salt
- 2 tsp. black pepper
- 2 Tbsp. oil
- 2 medium onions, chopped
- 2 Tbsp. chopped garlic
- 2 qt. hot water
- 4 Tbsp. paprika
- 4 Tbsp. chili powder
- 2 small cans (8 oz.) tomato sauce
- 2 Tbsp. powdered cumin
- 4 Tbsp. chili mix
- Work the first 4 ingredients well.
- Heat the oil in a heavy skillet. Add meat mixture and saute slowly, stirring to cook thoroughly but not too brown. Add the onions and garlic.
- Cook until onions and garlic are soft. Add the hot water and simmer 1 hour.
- Add the paprika, chili powder, tomato sauce, cumin and chili mix.
- Simmer about 1 hour, stirring often. When reheating, do not add water but warm slowly over low heat.
