Pecan Pie
- 12 cup butter, softened
- 1 cup sugar
- 1 cup corn syrup (light or dark seem the same to me)
- 12 teaspoon salt
- 1 12 teaspoons vanilla
- 3 eggs, beaten
- 2 cups pecans (pieces or halves)
- 1 pie shell, 9 inch
- Preheat oven 350-375 degrees.
- In a mixer (or by hand) mix butter, sugar, syrup, salt, and vanilla.
- Beat well.
- Add eggs until blended.
- Fold in pecans by hand.
- Pour into pie shell.
- Cover pie rim with pie crust band or foil pieces.
- Bake for 40-50 minutes.
- Custard is set when a knife inserted in the center comes out clean.
