Banana Bread
- 1/2 cup golden raisins
- 1/3 cup Jamaican rum
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup (packed) light brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon grated nutmeg
- 1 teaspoon ground ginger
- 3 very ripe bananas, mashed
- 2/3 cup macadamia nuts, lightly toasted and coarsely chopped
- 1/2 cup shredded coconut
- Preheat the oven to 350 F. Grease and lightly flour a 9 x 5-inch loaf pan and set aside.
- Place the raisins and rum together in a small saucepan.
- Bring to a boil, then simmer 10 minutes.
- Set aside to cool.
- Using an electric mixer, cream the butter and sugar together in a mixing bowl.
- Add the egg and beat until light and fluffy.
- Beat in the vanilla.
- Sift all the dry ingredients and spices together and add to the butter mixture alternately with the mashed banana, stirring well after each addition.
- Gently fold in the macadamia nuts, coconut, and raisins with rum.
- Pour evenly into the prepared pan.
- Bake the bread until a toothpick inserted in the middle of the loaf comes out clean, about 1 hour.
- Cool in the pan 30 minutes, then invert onto a wire rack to cool completely.
- Serve at room temperature in thick slices.
