Rough Puff Pastry
- 225 g flour
- 75 g butter or 75 g margarine
- 75 g lard or 75 g cooking fat
- 1 pinch salt
- squeeze lemon juice
- Sieve flour and salt into mixing bowl.
- Cut fat in flour into small pieces.
- Mix to stiff dough with cold water and added lemon juice.
- Turn on to lightly floured board.
- Roll into strip about 0.5 cm thick.
- Keep ends square and sides straight.
- Fold pastry by bringing side edges to middle, then top and bottom edges to middle.
- Fold in half.
- Press edges together.
- Whenever possible put into cold place for 10-15 minutes between rolling.
- Half turn roll out and fold again as before.
- Re-roll and use as required.
