Florida Grouper with Tomatillo Sauce, Florida Orange-Mango Salsa, Lump Crabmeat Guacamole, and Fried Yucca Chips

  1. Segment the oranges over a bowl to catch the juices.
  2. Add the mango, onions, bell peppers, cilantro, jalapeno, oil, zest, ginger, salt, and cayenne.
  3. Adjust seasoning to taste.
  4. Cover and refrigerate for 1 hour before serving to allow the flavors to blend.
  5. Heat a large, heavy saute pan over high heat.
  6. When the pan is very hot, add the tomatillo's and cook until they begin to soften and the skin begins to blister and brown.
  7. Add the onions and cook until tender.
  8. Add the chicken stock, chile, and garlic and just bring to a simmer.
  9. Remove from the heat.
  10. Transfer to a blender.
  11. Add the herbs, and honey and puree until smooth.
  12. Season with salt and pepper, to taste.
  13. Keep warm until ready to serve.
  14. In a large bowl, combine all the ingredients except the crabmeat, mashing slightly to combine.
  15. Fold in the crabmeat and adjust the seasoning, to taste.
  16. Refrigerate until ready to serve.
  17. Heat a large cast iron skillet over high heat until just smoking.
  18. Season both sides of the fish fillets with Essence, salt, and pepper, patting it on with your hands.
  19. Sear the fish until browned and crisp, about 2 minutes per side, turning once.
  20. Remove from the heat.
  21. Arrange 1 fish fillet across the center of each of 4 plates.
  22. Spoon a dollop of the orange-mango salsa to 1 side of the fish, and the crabmeat guacamole to the other side.
  23. Fan the yucca fries to the top.
  24. Place the margaritaville tequila shot below the fish with the salted lime wedge to the side.
  25. Sprinkle with cilantro and serve.
  26. In a deep saucepan, heat enough oil to come halfway up the sides to 375 to 380 degrees F.
  27. Using a mandoline or very sharp heavy knife, slice the yucca as thinly as possible.
  28. Add the yucca in batches to the oil and cook, turning, until golden brown, 45 seconds to 1 minute.
  29. Drain on paper towels, season with Essence and salt, to taste.
  30. Serve hot.
  31. 2 1/2 tablespoons paprika
  32. 2 tablespoons salt
  33. 2 tablespoons garlic powder
  34. 1 tablespoon black pepper
  35. 1 tablespoon onion powder
  36. 1 tablespoon cayenne pepper
  37. 1 tablespoon dried leaf oregano
  38. 1 tablespoon dried thyme
  39. Combine all ingredients thoroughly and store in an airtight jar or container.
  40. Yield: about 2/3 cup
